LLCC Culinary Arts and Community Education programs partner with Springfield’s historic Pasfield House to offer cooking classes

SPRINGFIELD – Lincoln Land Community College Culinary Arts and Community Education programs invite food enthusiasts to improve their cooking skills with local chefs or enjoy a chef-prepared meal in the historic surroundings of the Pasfield House located at 525 S. Pasfield, Springfield. The Pasfield House is an elegant 1896 Georgian-style mansion and is a popular place for receptions and meetings.

Beginning April 5, two series of cooking classes will feature Augie Mrozowski, owner of the new August restaurant and popular Augie’s Front Burner; Denise Hanson, former executive chef at Osteria Giacomo’s in Algonquin, Illinois and current banquet chef at the Hilton Springfield; and Erin Paris, registered dietitian.

The “Boot Camp Series,” will be offered on Thursdays beginning at 5:30 p.m. The classes in this series will cover the basics in a particular culinary skill or cuisine, and a light meal will be shared at the end of each class. Participants can register for one class or all in the series. Each class in the series has a registration fee of $50. Dates and topics of the “Boot Camp Series” include:

Apr. 5: Healthy Hors d’oeuvres with Erin Paris – Enjoy wonderful hors d’oeuvres without feeling guilty. Join Erin in preparing delicious nibbles for that next dinner party using low-fat ingredients with all the flair of Rachel Ray. Course code: CEW 102-X53P

Apr. 12: Pasta with Denise Hanson – Participants will create authentic pasta sauces and learn to make noodles and then shape them into fettuccine, ravioli and more. Course code: CEW 102-X53R

Apr. 19: Italian with Augie Mrozowski – Come see what unique dish Augie will prepare. Participants will be sure to have a fun, dining experience. Course code: CEW 102-X53N

Apr. 26: Dating a Vegetarian with Denise Hanson - No need to end a relationship! Denise will help participants find their way to loving vegetables. . .and their vegetarian. Course Code: CEW 102-X53V

May 3: Knife Skills II with Denise Hanson – This class is for those who have taken Knife Skills I or are ready to progress to more complex knife techniques. Participants will learn to cut up a whole chicken, skin a fish and prepare elementary meat cuts. Course code: CEW 102-X53T


The “Gourmet Dinner Series,” will be held on Fridays at 6 p.m. In these classes, a complete dinner will be prepared by the chef in the intimate kitchen of the Pasfield House. Each dinner will consist of multiple courses and wine will be available. Each class in the series has a registration fee of $60. Dates and topics of the “Gourmet Dinner Series” include:

Apr. 6: Vegetarian with Denise Hanson - Not just for vegetarians. . . it’s about vegetables. Denise will prepare a delicious meal that is low in fat and high in fiber. Students will get a taste of some of the new vegetables appearing in stores. Course code: CEW 102-X53Q

Apr. 13: Tapas with Denise Hanson - Tapas are delicious small plate dishes eaten as a snack, first course and even a complete meal. Denise will prepare a complete tapas meal from seafood, meats and vegetables. Course code: CEW 102-X53S

Apr. 20: Latin with Denise Hanson - More and more of the sultry, spicy sensations of the Latin kitchen are finding their way into restaurants and home kitchens. Spend an evening exploring the ingredients, flavors and textures of this fascinating cuisine. Course code: CEW 102-X53U

Apr. 27: Pacific Northwest with Denise Hanson - Denise is a graduate of the Seattle Culinary Program. She has worked in some of the finest restaurants there and promises to bring some of her Pike Street Market experiences to class. Course code: CEW 102-X53W

May 4: New England with Denise Hanson - Think yankee pot roast, chowders, stews, harvest of vegetables and cobblers, and you have the makings for a wonderful dinner. From Main to Connecticut, enjoy the New England specialties and make sure to leave room for a Fluffemutter sandwich. Course Code: CEW 102-X53O
